This is the classic, done properly—scaled for individual plates but finished with the same care as our larger centerpieces. No sharing required. Just bake, serve, and take the credit.

Each personal Beef Wellington features center-cut filet mignon (Chateaubriand), brushed with Dijon mustard, layered with our house-made shallot and garlic mushroom duxelles, and wrapped in buttery puff pastry. Finished with flaky salt, rosemary, and thyme for a clean, balanced finish.

Fully prepared and ready to bake, these are ideal for intimate dinners, elevated weeknight meals, or a refined way to close out the year.

How to Prepare Your Classic Beef Wellington:

TIP: For best results, thaw in the refrigerator overnight.  

TIP: It’s always best to use a meat thermometer. For a medium-rare center, we recommend removing the welly when the internal temperature reaches 115°F.  

  1. Preheat oven to 425F WITH baking sheet inside.
  2. Once the oven reaches temperature, remove the baking sheet with an oven mitt and cover it with a high smoke point oil such as canola, grape seed, or vegetable oil. Be careful; the tray will be hot. You can use a paper towel to distribute the oil evenly.
  3. Place THAWED Beef Wellington on the baking sheet and place it on the middle shelf of the oven.
  4. Bake until the crust is golden brown and the meat thermometer reaches your desired temperature. This is usually about 15-20 min for a med-rare center.
  5. Remove from the oven, cover with foil, and allow to rest for 10-15 minutes before slicing.
  6. Slice with a sharp, smooth edge knife or serrated bread knife.

Remember, these times are estimates, and it's always a good idea to check the product while cooking to ensure it's not overcooked. Enjoy!

Storage

How to Store Your Classic Beef Wellington:

  • We ship your items frozen with dry ice to maintain their quality.
  • Note that dry ice might evaporate in transit, which could lead to some thawing of your product.
  • Please don't touch dry ice directly with your bare hands.
  • Once you receive the items, immediately transfer them to the freezer until they're ready to be cooked.
  • You can keep our products in the freezer for as long as 6 months.
  • If a product stays in the fridge for more than 3 days after being thawed, discard it.
